  • 1 cup medjool dates, pitted
  • ½ cup walnuts (or almonds, pecans)
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon almond butter (or peanut butter)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 2 tablespoons mini chocolate chips or chopped dark chocolate

Instructions

  1. Soften the Dates
    If your dates are dry, soak them in warm water for 5–10 minutes, then drain.
  2. Blend the Base
    In a food processor, add walnuts and pulse until finely ground. Add cocoa powder, dates, almond butter, vanilla, and salt. Process until mixture becomes sticky and crumbly.
  3. Add Chocolate Chips
    If using, pulse in chocolate chips until just combined.
  4. Form into Bites
    Scoop out heaping tablespoons of dough and roll into balls with your hands.
  5. Chill and Serve
    Place bites on a plate or tray and refrigerate for at least 15 minutes to firm up. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
