No-Bake Rocky Road Bars

These No-Bake Rocky Road Bars are the ultimate indulgence! Packed with chocolate, marshmallows, and nuts, they’re a quick and delicious treat that’s perfect for sharing—or keeping all to yourself.


Ingredients

  • 2 cups semi-sweet chocolate chips
  • ½ cup unsalted butter
  • ¼ cup light corn syrup or golden syrup
  • 1 tsp vanilla extract
  • 2 cups mini marshmallows
  • 1 cup chopped nuts (walnuts, almonds, or peanuts)
  • 1 cup crushed graham crackers or digestive biscuits

Instructions

  1. Prepare the Pan:
    • Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
  2. Melt the Chocolate Mixture:
    • In a medium saucepan over low heat, melt the chocolate chips, butter, and corn syrup, stirring frequently until smooth. Remove from heat and stir in the vanilla extract.
  3. Combine the Ingredients:
    • In a large bowl, mix the mini marshmallows, nuts, and crushed graham crackers. Pour the melted chocolate mixture over the top and stir until everything is evenly coated.
  4. Press into the Pan:
    • Transfer the mixture to the prepared pan. Press it down gently with a spatula to create an even layer.
  5. Chill and Set:
    • Refrigerate for at least 2 hours, or until firm.
  6. Slice and Serve:
    • Remove from the pan using the parchment overhang. Slice into bars or squares and enjoy!

Notes

  • Customize with your favorite add-ins, like dried fruit, coconut flakes, or pretzels.
  • Store bars in an airtight container in the refrigerator for up to 5 days or freeze for up to 1 month.
  • Use dark chocolate for a richer flavor or milk chocolate for a sweeter treat.
