Instructions

  1. Activate the yeast:
    In a large bowl or stand mixer, combine warm water, yeast, and sugar. Stir gently and let sit for 5–10 minutes, until it becomes foamy.
  2. Make the dough:
    Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix on low speed or by hand until combined. Gradually add the remaining flour until a soft dough forms.
  3. Knead the dough:
    Knead the dough for about 7–8 minutes by hand or 5 minutes in a stand mixer with a dough hook, until smooth and elastic.
  4. Let it rise:
    Place the dough in a lightly greased bowl, cover with plastic wrap or a damp towel, and let rise in a warm area for 1–1½ hours, or until doubled in size.
  5. Shape the breadsticks:
    Punch down the dough and divide it into 12 equal pieces. Roll each piece into a 6–7 inch log. Place breadsticks on a baking sheet lined with parchment paper, about 2 inches apart.
  6. Second rise:
    Cover the breadsticks loosely and let them rise for 30–40 minutes until puffy.
  7. Preheat the oven to 400°F (200°C).
