Ingredients (Makes 12 Brownies)

  • Unsalted butter, melted – 115g (½ cup)
  • Granulated sugar – 200g (1 cup)
  • Brown sugar – 50g (¼ cup)
  • Eggs – 2 large
  • Vanilla extract – 1 teaspoon
  • All-purpose flour – 95g (¾ cup)
  • Cocoa powder (unsweetened) – 40g (⅓ cup)
  • Salt – ½ teaspoon
  • Baking powder – ¼ teaspoon
  • Dark chocolate chips (optional, for extra richness) – 100g (½ cup)

Instructions

Step 1: Prepare & Preheat

  1. Preheat your oven to 175°C (350°F).
  2. Line a 20x20cm (8×8-inch) baking pan with parchment paper, leaving an overhang for easy removal.

Step 2: Mix the Batter

  1. In a large microwave-safe bowl, melt the butter in the microwave for 30-45 seconds until fully melted.
  2. Whisk in granulated sugar and brown sugar, mixing until smooth.
  3. Add the eggs and vanilla extract, whisking until the mixture is glossy and well combined.
  4. Sift in the flour, cocoa powder, salt, and baking powder.
  5. Use a spatula to gently fold everything together until just combined (don’t overmix!).
  6. Stir in the chocolate chips, if using.

Step 3: Bake the Brownies

  1. Pour the brownie batter into the prepared pan and smooth the top.
  2. Bake for 22-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Step 4: Cool & Serve

  1. Let the brownies cool in the pan for 10-15 minutes before lifting them out.
