One Pot Creamy Cajun Sausage Pasta

If you’re craving something comforting, creamy, and bursting with bold flavor — but don’t want to dirty every pan in your kitchen — this One Pot Creamy Cajun Sausage Pasta is your dream dinner. This dish is rich, spicy, and smoky with a kick of Cajun heat, silky cream sauce, and perfectly cooked pasta — all made in just one pot.

Perfect for busy weeknights, family dinners, or lazy Sundays when you want maximum flavor with minimal effort, this recipe hits all the right notes. The combination of sausage and Cajun spice gives it a Southern-style kick, while the creamy sauce ties it all together beautifully.


???? Ingredients (Serves 4)

Main Ingredients:

  • Smoked sausage (andouille or kielbasa) – 350g, sliced into coins
  • Olive oil – 1 tbsp (15ml)
  • Onion – 100g, finely chopped
  • Garlic – 3 cloves (10g), minced
  • Cajun seasoning – 1 tbsp (10g)
  • Smoked paprika – 1 tsp (2g)
  • Dried oregano – ½ tsp (1g)
  • Penne or rotini pasta – 300g
  • Chicken broth – 600ml
  • Heavy cream – 150ml
  • Cream cheese – 80g, room temperature
  • Grated Parmesan – 40g
  • Salt – to taste
  • Black pepper – ½ tsp (1g)
  • Fresh parsley – 10g, chopped (for garnish)

Optional Add-ins:

  • Baby spinach – 2 handfuls
  • Cherry tomatoes – 100g, halved
  • Red bell pepper – 1 small (100g), diced

Step 1: Sauté the Sausage

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Add the sliced sausage and cook until browned on both sides, about 5–6 minutes.
  3. Remove the sausage and set aside, leaving the flavorful oil in the pan.

Step 2: Build the Flavor Base

  1. Add onions to the same pot and cook for 2–3 minutes until soft.
  2. Stir in garlic, Cajun seasoning, smoked paprika, and oregano. Cook for 1 minute to bloom the spices.

Step 3: Cook the Pasta

  1. Pour in the chicken broth and bring to a simmer.
  2. Stir in the dry pasta, cover, and reduce heat to medium-low.
  3. Cook for 10–12 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.

Step 4: Make It Creamy

  1. Add in the heavy cream, cream cheese, and Parmesan.
  2. Stir continuously until the cheese is fully melted and the sauce is silky.
  3. Return the sausage to the pot.
  4. Season with salt and pepper to taste.
  5. Optional: Stir in spinach or cherry tomatoes and cook for 1–2 more minutes until wilted/warmed through.

Step 5: Serve & Garnish

  1. Remove from heat and let the pasta sit for 2 minutes to thicken slightly.
  2. Sprinkle with chopped parsley and extra Parmesan before serving.
