  • 300g penne or rigatoni pasta
  • 300g smoked sausage (andouille or kielbasa), sliced

  • 1 tbsp Cajun seasoning (or to taste)
  • 400ml chicken broth
  • 250ml heavy cream

  • Optional: chili flakes for added heat

Step 1: Sauté the Sausage and Veggies

In a large deep skillet or Dutch oven, heat olive oil over medium-high heat. Add sliced sausage and cook until browned, about 4–5 minutes.

Add onion, garlic, and bell pepper, and cook until soft and fragrant — about 3–4 minutes.


Step 2: Build the Creamy Base

Stir in the Cajun seasoning, then pour in the chicken broth and heavy cream. Bring to a gentle simmer.


Step 3: Add the Pasta

Stir in the pasta, reduce heat to medium-low, and cover. Cook for 12–15 minutes, stirring occasionally, until pasta is tender and sauce thickens.


Step 4: Stir in the Cheese

Add the cream cheese and Parmesan, stirring until melted and smooth. Taste and adjust salt, pepper, or Cajun spice as needed.


Step 5: Garnish and Serve

Remove from heat and sprinkle with fresh parsley and optional chili flakes. Serve hot!
