One-Pot Taco Spaghetti

This One-Pot Taco Spaghetti combines the bold flavors of tacos with the comforting appeal of pasta. Quick, easy, and made in just one pot, it’s perfect for weeknight dinners the whole family will love!


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 packet taco seasoning (1 oz)
  • 2 cups beef or chicken broth
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (8 oz) can tomato sauce
  • 8 oz spaghetti, broken in half
  • 1 cup shredded cheddar or Mexican blend cheese
  • Optional toppings: diced avocado, sour cream, chopped cilantro, crushed tortilla chips

Instructions

  1. Cook the Beef:
    • In a large pot or Dutch oven, cook the ground beef and onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  2. Add Seasoning and Liquids:
    • Stir in the taco seasoning, broth, diced tomatoes, and tomato sauce. Bring to a simmer.
  3. Cook the Spaghetti:
    • Add the spaghetti, ensuring it’s submerged in the liquid. Cover and reduce the heat to medium-low. Cook for 12–15 minutes, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed.
  4. Add Cheese:
    • Stir in ¾ cup of the shredded cheese until melted and creamy. Sprinkle the remaining cheese on top and cover for 1–2 minutes to melt.
  5. Serve:
    • Garnish with your favorite toppings and serve hot!

Notes

  • Add black beans or corn for extra texture and flavor.
  • Use whole wheat or gluten-free spaghetti if preferred.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
