This quick and easy one-pot teriyaki noodle recipe is a vegetarian delight made with tender vegetables, spaghetti, and a flavorful homemade teriyaki sauce. Perfect as a meatless meal or a side dish for teriyaki chicken!

Ingredients
- ½ green cabbage, shredded
- 2 carrots, shredded
- 1 teaspoon olive oil
- ⅔ cup soy sauce
- ½ cup brown sugar
- ½ teaspoon ground mustard
- 1 teaspoon ground ginger
- ½ teaspoon garlic powder
- 16 oz (1-pound box) spaghetti
- 1 tablespoon sesame seeds

Instructions
- Sauté Vegetables: Heat a large pot over medium-high heat. Add olive oil, cabbage, and carrots. Sauté for 5 minutes or until the vegetables begin to soften.
- Prepare Sauce: Stir in soy sauce, brown sugar, ground mustard, ginger, and garlic powder. Mix well to combine.
- Cook Noodles: Add spaghetti to the pot (break in half if desired for easier mixing). Pour in 3 ½ cups of water.
- Simmer & Stir: Cook uncovered for 15-18 minutes. As the noodles soften, stir the pot every few minutes to prevent sticking, especially towards the end of cooking. Add an extra ½ cup of water if the noodles aren’t tender and the liquid evaporates too quickly.
- Finish & Serve: Once noodles are fully cooked and the sauce thickens, remove from heat. Toss in sesame seeds. Serve immediately, garnished with extra sesame seeds and green onions if desired.
Notes
- Cabbage Substitute: Napa cabbage works wonderfully in place of green cabbage.
- Reheating Tip: Splash a little water over the noodles before microwaving to prevent drying out.
- Adjust water quantity as needed, depending on your pasta brand.
