Outback Steakhouse Potato Soup

Description

This thick and creamy potato soup is inspired by Outback Steakhouse’s famous dish. Made with tender potatoes, crispy bacon, cheddar cheese, and a rich, velvety broth, this soup is pure comfort food. Perfect for chilly nights, meal prepping, or when you need a cozy, satisfying meal!


Ingredients

For the Soup:

  • 6 large russet potatoes (peeled and diced)
  • 1 small onion (finely chopped)
  • 4 cups chicken broth
  • 2 cups heavy cream (or half-and-half for a lighter version)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

For Toppings:

  • 1 cup shredded cheddar cheese
  • 6 slices crispy bacon (chopped)
  • ½ cup green onions (chopped)
  • Sour cream (optional)

Instructions

Step 1: Cook the Potatoes

  1. In a large pot, add the potatoes, onions, and chicken broth.
  2. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until potatoes are fork-tender.

Step 2: Make the Roux

  1. In a separate saucepan, melt butter over medium heat.
  2. Stir in flour and cook for 1-2 minutes to remove the raw flour taste.
  3. Slowly whisk in heavy cream, stirring constantly until smooth.

Step 3: Combine & Simmer

  1. Pour the cream mixture into the pot with the potatoes.
  2. Add salt, pepper, garlic powder, and paprika. Stir well.
  3. Simmer on low for 10 minutes, stirring occasionally.

Step 4: Blend for Creaminess (Optional)

  1. For a smoother soup, use an immersion blender to puree some of the potatoes. Leave some chunks for texture.

Step 5: Add Cheese & Bacon

  1. Stir in 1 cup shredded cheddar cheese and half of the chopped bacon until melted.

Step 6: Serve & Garnish

  1. Ladle into bowls and top with extra cheese, bacon, green onions, and a dollop of sour cream.

  • Serve with warm crusty bread or garlic toast.
  • Pair with a grilled cheese sandwich for an extra comforting meal.
  • Add a side salad for a balanced dish.

Saving & Storage

  • Refrigeration: Store in an airtight container for up to 4 days.
  • Freezing: Freeze in portions for up to 3 months (thaw in the fridge overnight before reheating).
  • Reheating: Warm over low heat, stirring frequently. Add a splash of milk if needed.
