Overnight Crème Brûlée French Toast

June 14, 2025 by el hassan Leave a Comment

If you’re looking to impress at brunch or treat your family to something truly special, this Overnight Crème Brûlée French Toast is the showstopper you need. Imagine thick slices of bread soaked overnight in a rich vanilla custard, then baked to golden perfection with a buttery caramelized sugar layer that mimics the crisp topping of a classic crème brûlée. It’s dreamy, custardy, sweet — and best of all, it’s all prepped the night before.

Perfect for holidays, birthdays, weekend brunches, or just a cozy Sunday morning, this recipe feels fancy but couldn’t be easier. Just assemble it the night before, refrigerate, and pop it in the oven in the morning. It’s a brilliant twist on French toast — one that will make everyone at the table feel spoiled.

Ingredients

For the Caramel Base:

  • ½ cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 2 tablespoons light corn syrup (or maple syrup for a twist)

For the French Toast:

  • 1 loaf French bread or brioche, sliced into 1-inch thick slices (about 10–12 slices)
  • 5 large eggs
  • 1½ cups whole milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: 1 teaspoon orange zest or ½ teaspoon cinnamon for added flavor

Instructions

1. Make the Caramel Base

  • In a small saucepan over medium heat, melt the butter.
  • Stir in the brown sugar and corn syrup until fully dissolved and bubbling (about 2–3 minutes).
  • Pour the caramel into a 9×13-inch baking dish and spread evenly across the bottom.

2. Layer the Bread

  • Arrange the bread slices over the caramel in a single layer. You can overlap slightly if needed.

3. Prepare the Custard

  • In a large bowl, whisk together the eggs, milk, vanilla, salt, and optional flavorings like zest or cinnamon.
  • Pour the mixture evenly over the bread, pressing gently so each piece is soaked.

4. Refrigerate Overnight

  • Cover the dish tightly with plastic wrap and refrigerate for at least 8 hours or overnight.

5. Bake

  • In the morning, preheat your oven to 350°F (175°C).
  • Uncover the dish and bake for 35–40 minutes, or until the top is golden brown and the custard is set.
  • Let rest for 5–10 minutes before serving.

6. Serve

  • Serve warm, either flipped so the caramel side is on top, or scoop with caramel underneath like a sticky bun.
  • Optional toppings: powdered sugar, fresh berries, whipped cream, or even a brûléed sugar sprinkle with a kitchen torch.

Tips & Tricks

  • Bread matters: Day-old French bread or brioche works best — it soaks up the custard without turning mushy.
  • Make it brûlée-style: After baking, sprinkle the top with sugar and use a kitchen torch for a crisp caramelized finish.
  • Flavor variations: Add a splash of rum or brandy to the custard for a grown-up twist.
  • Want less sweet? Reduce the brown sugar to ¾ cup and serve with unsweetened whipped cream.
  • Prep tip: Slice your bread and mix your custard early — assembly takes just minutes.

Something Special from Me ????✨

This is the recipe I reach for every Christmas morning. There’s something magical about waking up, throwing this in the oven, and sipping coffee while your home fills with the scent of caramel, vanilla, and toasted bread. It feels fancy, but it’s the easiest thing in the world — no flipping, no standing by the stove.

Want to elevate it even more? Serve it with a brûléed grapefruit half and a mimosa for the ultimate brunch experience. Or swap the bread for croissants if you’re really feeling indulgent. Trust me — this one turns any morning into a celebration.
