Paleo Grilled Chicken Cobb Salad

A clean, high-protein, grain-free twist on the classic Cobb salad—simple, satisfying, and bursting with flavor!

This Paleo Cobb salad is a complete meal in a bowl: high in protein, rich in healthy fats, and loaded with vitamins and minerals. Great for meal prep, lunch, or a light dinner that doesn’t skimp on satisfaction.

For the Salad:

  • Chicken breast (boneless, skinless) – 250g
  • Avocado – 1 ripe (150g), sliced
  • Hard-boiled eggs – 2 large (100g)
  • Cherry tomatoes – 100g, halved
  • Cucumber – 100g, sliced
  • Red onion – 30g, thinly sliced
  • Romaine lettuce – 150g, chopped
  • Cooked bacon (Paleo-friendly) – 60g, chopped
  • Olive oil or avocado oil – 1 tbsp, for grilling

For the Dressing:

  • Extra virgin olive oil – 3 tbsp (45ml)
  • Apple cider vinegar – 1 tbsp (15ml)
  • Dijon mustard (check ingredients for Paleo compliance) – 1 tsp
  • Garlic (minced) – 1 clove
  • Salt – ¼ tsp
  • Black pepper – ¼ tsp

1. Grill the Chicken

  • Season the chicken breast with salt and pepper.
  • Heat oil in a grill pan over medium-high heat. Grill the chicken for 5–6 minutes per side, or until fully cooked (internal temp of 75°C / 165°F).
  • Let rest for a few minutes, then slice.

2. Prep the Salad Ingredients

  • Boil eggs ahead of time and peel.
  • Chop lettuce, slice avocado, cut tomatoes, cucumber, onion, and crumble bacon.

3. Make the Dressing

  • Whisk together olive oil, vinegar, Dijon, garlic, salt, and pepper in a small bowl or jar.

4. Assemble the Salad

  • Divide lettuce into two bowls. Top each with grilled chicken, sliced eggs, avocado, bacon, tomatoes, cucumber, and red onion.
  • Drizzle with the dressing just before serving.
