Ingredients
- 8 russet potatoes
- 2 cups ice
- 1½ tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ cup olive oil
- ¼ cup shredded parmesan cheese
- ¼ cup grated parmesan cheese
- 2 tbsp chopped parsley
- 2 tbsp chopped chives

Directions
- Prepare Potatoes: Wash and slice the potatoes into thin rounds. Place in a large bowl, cover with water, and add 2 cups of ice. Let them soak for 30 minutes.
- Preheat & Coat: Preheat the oven to 450°F. After soaking, pat the potatoes dry with a paper towel. Place them in a large zip-top bag, then add garlic powder, smoked paprika, salt, and pepper. Shake well to coat.
- Add Oil: Pour in the olive oil, close the bag, and shake again until the potatoes are evenly coated.
- Roast: Arrange the potatoes in a single layer on a parchment-lined baking sheet. Roast for 35-40 minutes, or until crispy and golden.
