These Parmesan Roasted Potatoes are the perfect easy side dish to complement any family dinner! Crispy on the outside, soft on the inside, and loaded with savory garlic, smoked paprika, and parmesan cheese. This simple, flavorful recipe is quick to prepare and makes for an irresistible addition to any meal.
Ingredients
- 8 russet potatoes
- 2 cups ice
- 1½ tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp kosher salt
- 1 tsp black pepper
- ½ cup olive oil
- ¼ cup shredded parmesan cheese
- ¼ cup grated parmesan cheese
- 2 tbsp parsley, chopped
- 2 tbsp chives, chopped

Instructions
- Wash and cut the potatoes into thin round slices and place them in a large bowl.
- Fill the bowl with water to cover the potatoes, and add about 2 cups of ice. Let the potatoes soak for 30 minutes.
- After 30 minutes, remove the potatoes from the water and pat them dry with a paper towel.
- Preheat the oven to 450°F (230°C).
- Place the dried potatoes in a large zip-top bag with garlic powder, paprika, salt, and pepper. Seal the bag and shake well to coat the potatoes.
- Add olive oil to the bag, seal it again, and shake to coat evenly.
- Remove the potatoes from the bag and arrange them in a single layer on a parchment-lined baking sheet (you may need more than one sheet).
- Bake for 35-40 minutes, or until the potatoes are crispy on the outside and tender inside.
- Remove from the oven and immediately transfer the potatoes to a large bowl. Add both types of parmesan cheese, parsley, and chives. Toss to coat.
- Serve hot with ranch dressing or ketchup for dipping.
