Ingredients
- 8 russet potatoes, thinly sliced into rounds
- 2 cups ice
- 1½ teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- ½ cup olive oil
- ¼ cup shredded parmesan cheese
- ¼ cup grated parmesan cheese
- 2 tablespoons parsley, chopped
- 2 tablespoons chives, chopped

Instructions
- Prep the Potatoes: Wash and thinly slice the potatoes into rounds. Place them in a large bowl and cover with water. Add 2 cups of ice and let soak for 30 minutes.
- Dry and Season: After soaking, drain the potatoes and pat them dry with a paper towel. Preheat the oven to 450°F (232°C).
- Coat the Potatoes: Add the potatoes to a large zip-top bag. Sprinkle with garlic powder, smoked paprika, salt, and black pepper. Close the bag and shake well to coat evenly. Add the olive oil, seal the bag, and shake again to coat the potatoes.
- Arrange on Baking Sheet: Spread the potatoes in a single layer on a parchment-lined baking sheet. Use additional sheets if needed to avoid overlapping.
- Bake: Bake for 35-40 minutes, or until the potatoes are golden brown, crispy on the edges, and tender in the middle.
- Add Parmesan & Herbs: Transfer the hot potatoes to a large bowl. Toss with shredded parmesan, grated parmesan, parsley, and chives until evenly coated.
- Serve: Serve hot with ranch dressing, ketchup, or your favorite dipping sauce.
