Paula Deen’s Crockpot Potato Soup Recipe

This Paula Deen’s Crockpot Potato Soup is a comforting, creamy, and hearty dish that’s perfect for chilly days. The slow cooker does all the work, infusing the potatoes and other ingredients with delicious flavors. It’s easy to make, and the result is a velvety, flavorful potato soup that will keep you coming back for more. Topped with crispy bacon, shredded cheese, and green onions, this soup is a crowd-pleaser!


Ingredients:

  • 6 medium russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (8 oz) block cream cheese, cubed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese (for topping)
  • 1/2 cup cooked bacon, crumbled (for topping)
  • 2-3 green onions, sliced (for topping)

Instructions:

  1. Prepare the Ingredients:
    • Peel and dice the russet potatoes into small cubes for even cooking.
    • Chop the onion and cube the cream cheese into small chunks to help it melt smoothly in the soup.
  2. Add to the Crockpot:
    • Place the diced potatoes, chopped onion, chicken broth, cream of chicken soup, cubed cream cheese, garlic powder, onion powder, salt, and pepper into the crockpot. Stir to combine.
  3. Cook the Soup:
    • Cover and cook on low for 7-8 hours or on high for 4-5 hours, or until the potatoes are tender.
  4. Mash the Potatoes:
    • Once the potatoes are cooked, use a potato masher to mash some of the potatoes directly in the crockpot to thicken the soup. If you prefer a smoother consistency, you can also use an immersion blender. Mash to your desired texture (some people like it a little chunky, while others prefer it creamier).
  5. Finish the Soup:
    • Stir the soup to incorporate any mashed potatoes. Taste and adjust the seasoning with additional salt and pepper if needed. If the soup is too thick, you can add more chicken broth or water to achieve your desired consistency.
  6. Serve:
    • Ladle the soup into bowls and top with shredded cheddar cheese, crumbled bacon, and sliced green onions. Serve hot and enjoy!
