Poor Man’s Husband Casserole

Poor Man’s Husband Casserole is a budget-friendly comfort food packed with hearty ground beef, creamy sauce, pasta, and melty cheese. This simple, satisfying casserole is perfect for feeding a hungry family or meal-prepping for the week!


Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 8 oz wide egg noodles
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup frozen peas (optional)
  • Chopped parsley (optional, for garnish)

Instructions

  1. Cook the Noodles:
    • Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions until al dente. Drain and set aside.
  2. Brown the Ground Beef:
    • In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain any excess grease. Season with garlic powder, paprika, salt, and pepper.
  3. Mix the Sauce:
    • In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, and milk. Stir until smooth.
  4. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
    • Layer the cooked noodles in the bottom of the dish. Pour the sauce mixture over the noodles, spreading evenly. Top with the ground beef mixture.
    • Sprinkle the frozen peas (if using) over the beef. Top with 1 1/2 cups of shredded cheddar cheese.
  5. Bake:
    • Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let the casserole cool for 5 minutes before serving. Garnish with parsley if desired and enjoy!
