Poor Man’s Prime Rib

Description: This Poor Man’s Prime Rib is an affordable and flavorful alternative to the classic dish. Made with a tender, juicy chuck roast, perfectly seasoned and slow-roasted to perfection, it’s a crowd-pleasing main course perfect for special occasions or Sunday dinners.


Ingredients

  • 3–4 lb (1.3–1.8 kg) boneless chuck roast
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp smoked paprika

Tender, juicy, and full of rich flavor, this budget-friendly recipe gives you all the elegance of prime rib at a fraction of the cost!


Instructions

  1. Preheat Oven: Preheat your oven to 325°F (165°C).
  2. Prepare the Roast: Pat the chuck roast dry with paper towels. Rub with olive oil, then evenly coat with garlic powder, onion powder, paprika, salt, and pepper.
  3. Sear the Roast: Heat a large skillet over medium-high heat. Sear the roast on all sides for 2–3 minutes per side until browned.
  4. Roast: Transfer the seared chuck roast to a roasting pan with a rack. Roast in the oven for 1.5–2 hours, or until the internal temperature reaches 130°F (55°C) for medium-rare or 140°F (60°C) for medium.
  5. Rest and Slice: Remove the roast from the oven, cover loosely with foil, and let rest for 15–20 minutes. Slice against the grain and serve.

  • Use a meat thermometer for precise doneness to avoid overcooking.
  • Serve with classic sides like mashed potatoes, roasted vegetables, or a horseradish sauce for extra flavor.
