Ingredients

For the Pork Tenderloin:

  • 500g pork tenderloin, cut into 2cm thick medallions
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter

For the Creamy Mushroom Sauce:

  • 1 tablespoon butter
  • 250g mushrooms, sliced (cremini or button mushrooms work best)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 200ml chicken broth
  • 200ml heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 50g grated Parmesan cheese

For the Pasta:

  • 250g fettuccine or tagliatelle
  • 1 teaspoon salt (for boiling water)
  • 1 tablespoon butter (for coating pasta, optional)
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. Drain, toss with a little butter (optional), and set aside.

Step 2: Sear the Pork Tenderloin

  1. Season the pork medallions with salt, black pepper, and smoked paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the pork for 3-4 minutes per side, until golden brown.
  4. Remove from the pan and set aside (it will finish cooking in the sauce).

Step 3: Make the Creamy Mushroom Sauce

  1. In the same pan, melt 1 tablespoon butter over medium heat.
  2. Add mushrooms and sauté for 5 minutes until golden and soft.
  3. Stir in onions and garlic, cooking for another 2 minutes.
  4. Pour in chicken broth, scraping up any browned bits from the pan.
  5. Stir in heavy cream, Dijon mustard, Worcestershire sauce, dried thyme, salt, and pepper.
  6. Simmer for 5 minutes, letting the sauce thicken slightly.

Step 4: Combine Everything

  1. Return the pork medallions to the pan, letting them simmer in the sauce for 3-5 minutes until fully cooked.
  2. Stir in the grated Parmesan cheese and mix well.
  3. Add the cooked pasta, tossing it in the creamy mushroom sauce.

Step 5: Serve & Enjoy!

  1. Plate the pasta and pork, ensuring each serving gets plenty of sauce.
  2. Garnish with fresh parsley and extra Parmesan cheese.
  3. Serve immediately and enjoy!
