Ingredients:
- 2 sheets puff pastry, thawed to room temperature
- 1 whole egg, whisked with 1 teaspoon water (for egg wash)
- 6 oz Gruyère cheese, shredded
- 8 slices Black Forest ham
- 8 whole eggs
- Kosher salt and ground black pepper, for seasoning
- Chives, chopped for garnish

Directions:
- Preheat the oven to 400°F (200°C).
- Roll out each puff pastry sheet into a square and cut each into 4 equal squares. Place the squares evenly spaced apart on two large baking sheets lined with parchment paper. Poke small holes in the center of each pastry with a fork. Brush with egg wash and sprinkle with kosher salt.
- Lay a slice of ham on each pastry square. Sprinkle shredded Gruyère cheese in a circle on top of the ham, leaving a space in the center for the egg. Bake for 10-15 minutes until the edges begin to puff.
- Remove from the oven and use the back of a spoon to create a slight divot in the center. Crack one egg into each well. Season with salt and pepper.
- Return to the oven and bake for an additional 10-15 minutes, until the egg whites are set and the puff pastry is golden brown.
- Garnish with chopped chives and serve immediately.
