Puff Pastry Croque Madame

These delicious puff pastry breakfast cups are filled with savory Gruyère cheese, Black Forest ham, and a perfectly baked egg. Flaky, golden pastry surrounds the rich ingredients for a satisfying and easy-to-make breakfast or brunch dish. Top them off with fresh chives for an added burst of flavor!

Ingredients:

  • 2 sheets puff pastry, thawed to room temperature
  • 1 whole egg, whisked with 1 teaspoon water (for egg wash)
  • 6 oz Gruyère cheese, shredded
  • 8 slices Black Forest ham
  • 8 whole eggs
  • Kosher salt and ground black pepper, for seasoning
  • Chives, chopped for garnish

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out each puff pastry sheet into a square and cut each into 4 equal squares. Place the squares evenly spaced apart on two large baking sheets lined with parchment paper. Poke small holes in the center of each pastry with a fork. Brush with egg wash and sprinkle with kosher salt.
  3. Lay a slice of ham on each pastry square. Sprinkle shredded Gruyère cheese in a circle on top of the ham, leaving a space in the center for the egg. Bake for 10-15 minutes until the edges begin to puff.
  4. Remove from the oven and use the back of a spoon to create a slight divot in the center. Crack one egg into each well. Season with salt and pepper.
  5. Return to the oven and bake for an additional 10-15 minutes, until the egg whites are set and the puff pastry is golden brown.
  6. Garnish with chopped chives and serve immediately.
