  • 3 cups powdered sugar (360g)
  • 1 teaspoon vanilla extract
  • Pinch of salt

1. Prepare the cake:

Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In a large bowl, mix the sugar and oil until smooth. Add eggs one at a time, beating well. Stir in the buttermilk, vanilla, vinegar, and purple food coloring.

Gradually add the dry ingredients to the wet, mixing just until combined. Do not overmix.

Divide the batter evenly between the prepared pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Make the frosting:

In a large bowl, beat the softened cream cheese and butter until light and creamy.

Add the melted white chocolate and beat until fully incorporated.

Gradually add the powdered sugar, vanilla extract, and a pinch of salt. Beat until fluffy and smooth.

3. Assemble the cake:

Level the cake layers if needed. Place one layer on a serving plate and spread with a generous amount of frosting. Add the second layer and frost the top and sides of the cake.

Decorate with white chocolate curls, fresh berries, or edible flowers for a stunning finish.
