Quick and Delicious French Toast Muffin Recipe

  • Brioche or French bread – 250g (about 4 cups), cut into small cubes

  • Brown sugar – 50g (¼ cup)
  • Granulated sugar – 50g (¼ cup)
  • Vanilla extract – 1 tsp
  • Ground cinnamon – 1 tsp
  • Nutmeg (optional) – ¼ tsp
  • Salt – ¼ tsp
  • Butter (melted) – 30g (2 tbsp)

For the Cinnamon-Sugar Topping:

  • Butter (melted) – 30g (2 tbsp)
  • Granulated sugar – 50g (¼ cup)
  • Ground cinnamon – 1 tsp

Instructions

Step 1: Preheat & Prepare

  1. Preheat your oven to 175°C (350°F).
  2. Grease a 12-cup muffin tin or line it with muffin liners.

Step 2: Prepare the Custard Mixture

  1. In a large mixing bowl, whisk together the eggs, milk, heavy cream, sugars, vanilla, cinnamon, nutmeg, and salt.
  2. Slowly pour in the melted butter, whisking continuously.

Step 3: Soak the Bread

  1. Add the bread cubes to the custard mixture, gently stirring to coat all pieces.
  2. Let the mixture sit for about 5-10 minutes so the bread can absorb the liquid.

Step 4: Fill the Muffin Tin & Bake

  1. Divide the soaked bread mixture evenly among the muffin cups. Press them down slightly so they hold together.
  2. Bake for 20-25 minutes, or until the tops are golden brown and slightly crisp.
  3. Let muffins cool for 5 minutes before removing them from the tin.

Step 5: Add the Cinnamon-Sugar Topping

  1. Brush each muffin with melted butter.
  2. Mix together the sugar and cinnamon, then sprinkle generously over each muffin.
