quick and easy black pepper chicken recipe

Description: This quick and easy black pepper chicken recipe delivers juicy, tender chicken, crisp vegetables, and a rich, savory black pepper sauce. With a few simple ingredients and just 25 minutes to prepare, it tastes even better than your usual Chinese takeout. Plus, it’s easily adaptable to be gluten-free with simple swaps. Perfect for busy weeknights!

Ingredients:

  • 1 lb (450 g) chicken breasts (or thighs), sliced into 1/4″ thick pieces
  • 1 tablespoon light soy sauce (or tamari for gluten-free)
  • 1 tablespoon Shaoxing wine (or dry sherry for gluten-free)
  • 2 teaspoons coarsely ground black pepper

Instructions:

  1. Combine chicken, soy sauce, Shaoxing wine, and cornstarch in a medium-sized bowl. Mix gently by hand until the chicken is coated with a thin layer of the marinade. Marinate for 10 to 15 minutes.
  2. In a small bowl, mix together all sauce ingredients (chicken broth, light soy sauce, dark soy sauce, Shaoxing wine, cornstarch, sugar, black pepper, and salt). Set aside.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the chicken and spread it into a single layer. Sear for about 30 seconds until lightly browned, then flip and cook for another 15–20 seconds. Stir occasionally. The chicken should be browned but slightly pink inside. Remove the chicken from the skillet and set aside.
  4. Add the remaining 1 tablespoon of oil to the skillet. Add the ginger and garlic, cooking briefly until fragrant. Add the onion and bell peppers, stirring for 20 seconds.
  5. Stir the sauce mixture to ensure the cornstarch is dissolved, then pour into the skillet. Stir immediately and cook until the sauce thickens to coat the back of a spoon (about 1-2 minutes). Return the chicken to the skillet and stir well to coat everything with the sauce.
  6. Turn off the heat, remove the skillet from the stove, and transfer everything to a large plate. Serve hot as a main dish.
