Quick & Easy Stuffed Potato Cakes

Crispy, cheesy, golden brown and filled with your favorite savory ingredients—these Quick & Easy Stuffed Potato Cakes are a hearty snack, appetizer, or light meal you’ll crave again and again.

Made with creamy mashed potatoes and filled with a cheesy, seasoned stuffing, these pan-fried delights come together in under 30 minutes with ingredients you probably already have at home. They’re incredibly versatile—use whatever fillings you love, from sautéed veggies to leftover meat, and watch them disappear fast!

Perfectly crisp on the outside and warm and gooey inside, these potato cakes are satisfying, freezer-friendly, and kid-approved.


???? Ingredients (Makes 6–8 Cakes)

For the Potato Dough:

  • 600 g potatoes (peeled and boiled)
  • 1 egg (approx. 50 g)
  • 100 g all-purpose flour
  • ½ tsp salt (3 g)
  • ¼ tsp black pepper
  • ½ tsp garlic powder or granules (optional)
  • 1 tbsp chopped chives or parsley (optional)

For the Stuffing (Basic Cheese & Veggie Filling):

  • 80 g shredded mozzarella or cheddar cheese
  • 50 g cooked mushrooms (chopped)
  • 50 g cooked spinach or kale (squeezed dry)
  • Salt & pepper to taste

For Frying:

  • 2–3 tbsp vegetable oil

Step 1: Prepare the Mashed Potato Dough

  1. Boil the peeled potatoes in salted water until fork-tender (about 15 minutes).
  2. Drain and mash until smooth. Let cool slightly.
  3. Mix in the egg, flour, salt, pepper, garlic powder, and herbs. Stir until a soft, slightly sticky dough forms. If too wet, add a bit more flour.

Step 2: Make the Filling

  1. In a small pan, sauté mushrooms and spinach until tender (or use leftovers).
  2. Mix with cheese, season with a pinch of salt and pepper.

Step 3: Form and Fill the Cakes

  1. Lightly oil your hands and divide the dough into 6–8 equal portions.
  2. Flatten each portion into a round disk in your palm.
  3. Spoon about 1 tablespoon of filling into the center. Fold the edges over and gently seal to form a ball.
  4. Flatten into a cake shape, about 1.5 cm thick.

Step 4: Fry

  1. Heat oil in a nonstick skillet over medium heat.
  2. Fry the cakes for 3–4 minutes per side until golden and crispy.
  3. Transfer to a paper towel–lined plate to drain excess oil. Serve warm.
