  • 2 tablespoons olive oil
  • 1 medium eggplant, diced
  • 1 zucchini, diced

  1. Sauté the vegetables:
    In a large pot, heat olive oil over medium heat. Add onion and garlic and cook for 3–4 minutes until softened.
  2. Add hearty vegetables:
    Stir in eggplant, zucchini, yellow squash, and bell peppers. Cook for 8–10 minutes, stirring occasionally, until vegetables begin to soften and brown.
  3. Add seasonings & tomatoes:
    Add thyme, oregano, bay leaf, salt, and pepper. Stir in the diced tomatoes with their juices and vegetable broth.
  4. Simmer:
    Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes until all vegetables are tender and flavors are melded.
  5. Finish & serve:
    Remove bay leaf. Taste and adjust seasoning. Serve hot, garnished with fresh basil, grated parmesan, or a swirl of good olive oil.
