Ingredients (Makes 12 Rolls)

For the Dough:

  • 480g (4 cups) all-purpose flour
  • 2 ¼ tsp (1 packet) active dry yeast
  • 50g (¼ cup) granulated sugar
  • 1 tsp salt
  • 2 tbsp unsweetened cocoa powder
  • 180ml (¾ cup) warm milk (about 45°C/110°F)
  • 60g (¼ cup) unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1-2 tsp red food coloring

For the Cinnamon Filling:

  • 100g (½ cup) unsalted butter, softened
  • 150g (¾ cup) brown sugar
  • 1 ½ tbsp cinnamon
  • 1 tsp vanilla extract

For the Cream Cheese Frosting:

  • 170g (6 oz) cream cheese, softened
  • 60g (¼ cup) unsalted butter, softened
  • 120g (1 cup) powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (to adjust consistency)

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, whisk together warm milk and sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until foamy.

Step 2: Make the Dough

  1. In a large mixing bowl, whisk together flour, cocoa powder, and salt.
  2. Add the melted butter, egg, vanilla extract, and red food coloring to the yeast mixture.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  4. Knead the dough on a floured surface for about 8 minutes until smooth and elastic.

Step 3: First Rise

  1. Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

Step 4: Prepare the Filling

  1. In a small bowl, mix together softened butter, brown sugar, cinnamon, and vanilla extract until smooth.

Step 5: Assemble the Rolls

  1. Roll the dough into a 30x40cm (12×16-inch) rectangle.
  2. Spread the cinnamon filling evenly over the dough.
  3. Roll the dough tightly into a log, starting from the long side.
  4. Cut into 12 equal slices and place them in a greased baking dish.

Step 6: Second Rise & Bake

  1. Cover the rolls and let them rise for 30-45 minutes, until puffy.
  2. Preheat your oven to 180°C (350°F).
  3. Bake for 20-25 minutes, until golden brown.

Step 7: Make the Cream Cheese Frosting

  1. Beat together cream cheese, butter, powdered sugar, and vanilla extract.
  2. Add 1-2 tbsp milk to adjust the consistency if needed.

Step 8: Frost & Serve

  1. Spread the frosting over the warm rolls.
  2. Serve immediately and enjoy!
