How to Make Roasted Chocolate Cherry Brownies

Step 1: Roast the Cherries

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss cherries with sugar and vanilla extract, then spread them out on the baking sheet.
  3. Roast for 15 minutes, until softened and slightly caramelized. Set aside to cool.

Step 2: Prepare the Brownie Batter

  1. Reduce oven temperature to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. In a microwave-safe bowl, melt butter and dark chocolate together. Stir until smooth.
  3. Whisk in granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
