1. Prepare the Potatoes

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss halved baby potatoes with olive oil, oregano, paprika, red pepper flakes (if using), salt, and pepper.
  3. Add the garlic cloves and toss gently to coat.

2. Roast the Potatoes

  1. Spread the potatoes and garlic out in a single layer on a baking sheet lined with parchment or foil.
