Roasted Potatoes with Baked Feta and Garlic

Inspired by Mediterranean flavors, this recipe features olive oil, fresh herbs, and a hint of spice, creating a savory and slightly tangy combination that pairs well with everything from grilled meats to vegetarian mains. Plus, it’s easy to prepare and packed with delicious textures!


Ingredients (Serves 4-6)

For the Roasted Potatoes:

  • Baby potatoes (halved or quartered) – 800g (about 1.75 lbs)
  • Olive oil – 3 tbsp
  • Garlic (minced or whole cloves, roasted with skin on) – 4 cloves
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Paprika (smoked or sweet) – 1 tsp
  • Dried oregano – 1 tsp
  • Red pepper flakes (optional for heat) – ½ tsp

For the Baked Feta:

  • Block of feta cheese – 200g (7 oz)
  • Olive oil – 1 tbsp
  • Cherry tomatoes (optional, for added sweetness) – 150g (1 cup)
  • Fresh thyme or rosemary sprigs – 2-3 sprigs
  • Honey (optional, for balance) – 1 tsp

For Garnish:

  • Fresh parsley (chopped) – 2 tbsp
  • Lemon zest – ½ tsp
  • Extra virgin olive oil (for drizzling)

How to Make Roasted Potatoes with Baked Feta and Garlic

Step 1: Prepare the Potatoes

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, toss the baby potatoes with olive oil, garlic, salt, black pepper, paprika, oregano, and red pepper flakes.
  3. Spread the potatoes evenly on a baking sheet lined with parchment paper.
  4. Roast for 25-30 minutes, flipping halfway through, until crispy and golden brown.

Step 2: Bake the Feta

  1. While the potatoes are roasting, place the feta block in a small baking dish.
  2. Drizzle with olive oil and add cherry tomatoes and fresh thyme/rosemary around it.
  3. Bake in the oven for 15-20 minutes, until the feta is soft and slightly golden on top.
  4. If you like a slight caramelized flavor, drizzle honey over the feta before baking.

Step 3: Assemble & Serve

  1. Remove the roasted potatoes and baked feta from the oven.
  2. Arrange the crispy potatoes on a serving plate and crumble the warm, creamy feta over them.
  3. Add the roasted cherry tomatoes and garlic for extra flavor.
  4. Garnish with fresh parsley, lemon zest, and an extra drizzle of olive oil.
