Roasted Tomato Basil Soup

Ingredients

For the Roasted Tomatoes:

  • 1.5 kg (3.3 lbs) fresh tomatoes (Roma, plum, or cherry, halved)
  • 1 large onion (150g), chopped
  • 4 cloves garlic, peeled
  • 3 tablespoons (45ml) olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Soup:

  • 500ml (2 cups) vegetable broth
  • 250ml (1 cup) heavy cream (or coconut milk for dairy-free)
  • 15g (½ cup) fresh basil leaves, plus extra for garnish
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar (optional, to balance acidity)
  • ½ teaspoon red pepper flakes (optional, for spice)
  • 2 tablespoons (30g) unsalted butter

Instructions

Step 1: Roast the Tomatoes

  1. Preheat oven to 200°C (400°F).
  2. Arrange the halved tomatoes, chopped onion, and garlic on a baking sheet.
  3. Drizzle with olive oil, then sprinkle with salt and black pepper. Toss everything together.
  4. Roast for 30-40 minutes, until the tomatoes are soft and slightly caramelized.

Step 2: Blend the Soup

  1. Transfer the roasted tomatoes, onions, and garlic to a blender or use an immersion blender directly in a large pot.
  2. Add the vegetable broth, basil, oregano, sugar (if using), and red pepper flakes.
  3. Blend until smooth and creamy.

Step 3: Simmer and Finish

  1. Pour the blended soup into a large pot and bring to a gentle simmer over medium heat for 10 minutes.
  2. Stir in the heavy cream and butter, allowing them to melt into the soup.
  3. Taste and adjust seasoning if needed.

Step 4: Serve and Enjoy

  1. Ladle the hot soup into bowls.
  2. Garnish with fresh basil leaves and a drizzle of olive oil.
  3. Serve with grilled cheese, garlic bread, or croutons.
