Looking for the ultimate cozy weeknight meal with minimal effort? This Rotisserie Chicken and Stuffing Casserole is pure comfort food — creamy, savory, and so satisfying. Tender shredded rotisserie chicken is baked under a golden, buttery stuffing crust with a rich, creamy sauce. It’s everything you love about Thanksgiving dinner packed into one easy casserole!

Perfect for feeding a family, prepping ahead, or using up leftover chicken, this casserole is a go-to dish when you want something hearty and homemade — fast.

🛒 Ingredients

  • 4 cups rotisserie chicken, shredded
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of celery soup (or use another can of cream of chicken)
  • ¾ cup sour cream
  • ½ cup milk
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 ½ cups chicken broth
  • 2 tablespoons butter, melted
  • Optional: 1 cup frozen peas and carrots (thawed) or green beans

👩‍🍳 Instructions

1. Preheat oven

Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or nonstick spray.

2. Prepare the filling

In a large bowl, combine the shredded rotisserie chicken, cream of chicken soup, cream of celery soup, sour cream, milk, garlic powder, onion powder, and black pepper. Mix until well combined. Stir in optional vegetables if using.

3. Assemble the casserole

Spread the chicken mixture evenly in the prepared baking dish.

4. Prepare the stuffing topping

In a separate bowl, combine the dry stuffing mix with chicken broth and melted butter. Let it sit for a couple of minutes to absorb the liquid, then fluff with a fork.

5. Top and bake

Spoon the stuffing mixture evenly over the chicken mixture. Bake uncovered for 35–40 minutes, or until bubbling and the top is golden brown.

6. Cool slightly and serve

Let rest for 5 minutes before serving. Garnish with chopped parsley if desired.
