Ingredients
For the Salted Caramel:
- ½ cup granulated sugar
- 2 tablespoons unsalted butter
- ¼ cup heavy cream
- ½ teaspoon sea salt
For the Chocolate Mousse:
- 6 ounces dark chocolate (60-70% cocoa), finely chopped
- 2 tablespoons unsalted butter
- 2 large egg yolks
- 2 tablespoons granulated sugar
- ¾ cup heavy whipping cream
For Topping:
- ½ cup whipped cream
- Flaky sea salt, for garnish
- Chocolate shavings or cocoa powder (optional)
Instructions
Step 1: Make the Salted Caramel
- In a medium saucepan, heat the sugar over medium heat, stirring constantly with a heatproof spatula until fully melted and golden brown.
- Add the butter and stir until melted. Slowly pour in the heavy cream, whisking continuously.
- Remove from heat and stir in the sea salt. Let cool slightly before pouring a thin layer into the bottom of each serving cup. Chill while preparing the mousse.
Step 2: Prepare the Chocolate Mousse
- Melt the chocolate and butter together in a heatproof bowl over a pot of simmering water (double boiler method). Stir until smooth, then remove from heat.
- In another bowl, whisk the egg yolks and sugar until light and creamy. Gradually mix in the melted chocolate.
- In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold it into the chocolate mixture until fully incorporated.
Step 3: Assemble the Mousse Cups
- Spoon or pipe the chocolate mousse over the chilled caramel layer in each cup. Smooth the tops and refrigerate for at least 2 hours until set.
Step 4: Add Toppings and Serve
- Before serving, top each cup with whipped cream, a sprinkle of flaky sea salt, and optional chocolate shavings or cocoa powder.
- Enjoy the perfect balance of creamy chocolate, rich caramel, and a hint of salt in every bite!
