These Sausage, Egg, and Cheese Breakfast Roll-Ups are the ultimate handheld breakfast: fluffy scrambled eggs, savory sausage, and melty cheese all wrapped up in golden crescent dough or tortillas. Baked until warm and bubbly, they’re a game-changer for busy mornings.

Whether you’re prepping ahead for the week or feeding a hungry weekend crowd, these breakfast roll-ups are simple, filling, and absolutely satisfying.

  • 1 tablespoon butter
  • 5 large eggs
  • Salt and pepper, to taste
  • 8 breakfast sausage links (or crumbled sausage)
  • 1 cup shredded cheddar cheese (or Colby Jack)
  • 1 can (8-count) refrigerated crescent roll dough
    (or 8 small flour tortillas, warmed)
  • Optional: chopped chives, hot sauce, or jalapeños for topping

Instructions

Step 1: Cook the Sausage

In a skillet over medium heat, cook the sausage links or crumbles until fully cooked and browned. Set aside.

Step 2: Scramble the Eggs

In the same skillet, melt butter. Beat the eggs with a pinch of salt and pepper, then pour into the skillet. Gently scramble until just set and fluffy. Don’t overcook!

Step 3: Assemble the Roll-Ups

Preheat oven to 375°F (190°C). Unroll the crescent dough and separate into triangles.

On the wide end of each triangle, layer a spoonful of scrambled eggs, a piece of sausage, and a sprinkle of cheese.

Roll up each triangle from wide end to tip, securing the filling inside.

💡 If using tortillas instead: roll like burritos and place seam-side down on baking sheet.

Step 4: Bake

Place the roll-ups on a parchment-lined baking sheet. Bake for 12–15 minutes, or until golden and bubbly.

Step 5: Serve

Serve warm, optionally topped with chopped chives or a side of salsa, ketchup, or hot sauce.
