Sausage French Toast Roll-Ups

For the Roll-Ups:

  • White sandwich bread (soft, no crust) – 12 slices (480g)
  • Breakfast sausage links (fully cooked or pre-cooked) – 12 links (300g)
  • Eggs – 3 large (150g)
  • Milk – 120ml
  • Ground cinnamon – 1 tsp (2g)
  • Vanilla extract – 1 tsp (5ml)
  • Salt – a pinch
  • Butter – 2 tbsp (30g), for pan-frying

Optional for Coating:

  • Granulated sugar – 50g (¼ cup)
  • Ground cinnamon – 1 tsp (2g)

Step 1: Prepare the Bread

  1. Trim the crusts off each bread slice (if not already done).
  2. Flatten each slice gently with a rolling pin to make it easy to roll.

Step 2: Add the Sausage

  1. Place one sausage link at the edge of each bread slice.
  2. Roll the bread around the sausage tightly and seal the edge with a dab of water if needed.

Step 3: Make the French Toast Mixture

  1. In a shallow bowl, whisk together eggs, milk, cinnamon, vanilla, and a pinch of salt.

Step 4: Dip & Cook

  1. Heat a large skillet over medium heat and melt butter.
  2. Dip each roll-up in the egg mixture, ensuring it’s fully coated but not soggy.
  3. Place them seam-side down in the pan and cook until golden brown on all sides — about 2–3 minutes per side.

Step 5: Optional Cinnamon Sugar Coating

  1. In a shallow dish, mix the sugar and cinnamon.
  2. While the roll-ups are still warm, toss them in the cinnamon sugar for a sweet finish.
