Shrimp Avocado Salad

This low-carb Shrimp Avocado Salad combines tender shrimp, creamy avocado, crisp lettuce, and zesty lime dressing for a refreshing and flavorful dish. Perfect as a light lunch or a satisfying appetizer!

Ingredients

Salad:

  • 1 pound large shrimp, thawed
  • 2 cups shredded lettuce
  • ¼ red onion, diced
  • 2 avocados, sliced
  • 1 tablespoon chopped cilantro

Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons lime juice
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon fresh cracked pepper

Instructions

  1. Cook the Shrimp:
    Bring a large pot of water to a boil, then lower the heat to medium. Steam the shrimp in a steamer insert or mesh strainer set over the water. Cover with a lid and steam until the shrimp curl and turn bright pink, about 4–6 minutes. Remove and let cool.
  2. Prepare the Dressing:
    In a large bowl, whisk together olive oil, lime juice, cumin, salt, and pepper until well combined and emulsified.
  3. Assemble the Salad:
    • Add the cooled shrimp to the bowl with the dressing.
    • Toss in shredded lettuce and diced red onions, mixing gently to coat everything in the dressing.
    • Arrange sliced avocados around the salad.
  4. Garnish and Serve:
    Sprinkle with fresh cilantro. Serve chilled or at room temperature.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 2 days. For the freshest taste, enjoy within 24 hours, as avocados may brown slightly.
  • Make Ahead: The dressing can be prepared up to 2 weeks in advance and stored in the fridge. Pre-cooked shrimp can also be used to save time.
  • Substitutions:
    • Replace red onions with green onions or omit them if preferred.
    • Swap cumin for paprika or coriander for a different flavor profile.
