Sliced Baked Potatoes

Description:

These Sliced Baked Potatoes are crispy on the outside, soft on the inside, and packed with buttery, cheesy goodness! Perfect as a side dish, snack, or appetizer, these potatoes are hasselback-style but even easier to make. Serve them with sour cream, chives, or your favorite dipping sauce for an irresistible treat!


Ingredients (Serves 4)

  • 4 medium russet potatoes (about 800g total)
  • 3 tablespoons (45g) unsalted butter, melted
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon dried thyme or rosemary
  • 100g (1 cup) shredded cheddar cheese
  • 50g (¼ cup) grated Parmesan cheese
  • 2 tablespoons fresh chives, chopped (for garnish)
  • Sour cream (for serving, optional)

Instructions

Step 1: Prepare the Potatoes

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Wash and scrub the russet potatoes, leaving the skin on.
  3. Slice the potatoes into ¼-inch (0.6 cm) thick rounds, but do not cut all the way through. Leave about ½ inch uncut at the bottom to keep the slices connected.

Step 2: Season & Bake

  1. In a bowl, mix melted butter, olive oil, minced garlic, salt, black pepper, paprika, and thyme.
  2. Brush the mixture generously over and in between the potato slices.
  3. Arrange potatoes on the baking sheet and bake for 40-45 minutes, or until they are golden brown and crispy on the edges.

Step 3: Add Cheese & Finish Baking

  1. Remove from the oven and sprinkle cheddar and Parmesan cheese over and between the slices.
  2. Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.

Step 4: Garnish & Serve

  1. Sprinkle with chopped chives and serve hot with sour cream or your favorite dipping sauce.

Tips for the Best Sliced Baked Potatoes

✔ Use a wooden spoon trick: Place the potato between two wooden spoons while slicing to prevent cutting all the way through.
✔ Extra crispy? Bake for an extra 5-10 minutes before adding the cheese.
✔ Customize the flavors: Add bacon bits, ranch seasoning, or hot sauce for extra taste.
✔ Best potatoes to use: Russet potatoes give the best crispiness, but Yukon Gold works well too!
