Ingredients (Serves 4)
- 4 medium russet potatoes (about 800g total)
- 3 tablespoons (45g) unsalted butter, melted
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika (optional)
- ½ teaspoon dried thyme or rosemary
- 100g (1 cup) shredded cheddar cheese
- 50g (¼ cup) grated Parmesan cheese
- 2 tablespoons fresh chives, chopped (for garnish)
- Sour cream (for serving, optional)
Instructions
Step 1: Prepare the Potatoes
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Wash and scrub the russet potatoes, leaving the skin on.
- Slice the potatoes into ¼-inch (0.6 cm) thick rounds, but do not cut all the way through. Leave about ½ inch uncut at the bottom to keep the slices connected.
Step 2: Season & Bake
- In a bowl, mix melted butter, olive oil, minced garlic, salt, black pepper, paprika, and thyme.
- Brush the mixture generously over and in between the potato slices.
- Arrange potatoes on the baking sheet and bake for 40-45 minutes, or until they are golden brown and crispy on the edges.
Step 3: Add Cheese & Finish Baking
- Remove from the oven and sprinkle cheddar and Parmesan cheese over and between the slices.
- Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.
Step 4: Garnish & Serve
- Sprinkle with chopped chives and serve hot with sour cream or your favorite dipping sauce.
