Slow Cooker Beef Bourguignon

June 12, 2025 by el hassan Leave a Comment

Beef Bourguignon is a timeless French dish that sings of rich flavors and cozy comfort. Traditionally simmered for hours on the stove or in the oven, this version uses a slow cooker to bring out the deep, tender goodness with minimal effort. Imagine fork-tender beef chunks swimming in a silky red wine and mushroom sauce infused with aromatic herbs — pure culinary bliss.

Whether you’re impressing guests or craving a hearty dinner, this recipe makes gourmet French cuisine approachable and stress-free. Serve it with creamy mashed potatoes, buttered noodles, or crusty bread to soak up every luscious drop.

???? Ingredients (U.S. Measurements)

  • 2 lbs beef chuck roast, cut into 1.5-inch cubes
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 6 slices bacon, chopped
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 8 oz cremini or button mushrooms, sliced
  • 2 tablespoons tomato paste
  • 2 cups dry red wine (Burgundy or Pinot Noir preferred)
  • 1 cup beef broth
  • 2 teaspoons fresh thyme leaves (or 1 tsp dried)
  • 2 bay leaves
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

????‍???? Instructions

  1. Prepare the beef:
Pat beef cubes dry and season generously with salt and pepper.
  2. Brown the beef and bacon:
In a large skillet over medium-high heat, heat 2 tablespoons olive oil. Brown beef in batches until all sides are seared (about 3-4 minutes per batch). Remove and set aside.
In the same skillet, add chopped bacon and cook until crisp. Remove and drain excess fat, leaving a bit for flavor.
  3. Sauté vegetables:
Add remaining tablespoon of olive oil if needed. Sauté onions and carrots until softened, about 5 minutes. Add garlic and mushrooms; cook another 3 minutes.
  4. Combine in slow cooker:
Transfer beef, bacon, and vegetables to slow cooker. Stir in tomato paste.
  5. Add liquids and herbs:
Pour in red wine and beef broth. Add thyme and bay leaves. Stir gently to combine.
  6. Cook low and slow:
Cover and cook on low for 7–8 hours, or on high for 4 hours, until beef is fork-tender.
  7. Thicken sauce (optional):
If sauce is too thin, mix flour with a little cold water to make a slurry. Stir into slow cooker and cook uncovered on high for 15-20 minutes until thickened.
  8. Serve:
Remove bay leaves. Garnish with fresh parsley. Serve hot over mashed potatoes, buttered noodles, or with crusty French bread.

???? Tips and Tricks

  • Use a good-quality red wine: It makes a big difference in flavor. Avoid cooking wines with added salt or preservatives.
  • Don’t skip browning: Searing the beef adds depth and richness to the final dish.
  • Customize mushrooms: Add pearl onions for an authentic touch or use wild mushrooms for earthier flavor.
  • Make ahead: This dish tastes even better the next day once the flavors meld — perfect for meal prep.
  • Adjust thickness: For a thicker sauce, add flour or cornstarch slurry toward the end.

✨ From Me to You – Make It Your Own

For a festive twist, add a splash of brandy or cognac after browning the beef and flambé before transferring to the slow cooker. Or toss in some pearl onions and fresh thyme sprigs right before serving for an elegant presentation.

Pair your Beef Bourguignon with a robust red wine, like a Pinot Noir or Cabernet Sauvignon, to complement the dish’s rich flavors. And don’t forget a fresh green salad on the side for balance.

This classic French comfort food will surely become a favorite in your kitchen — easy, satisfying, and oh-so-delicious.
