Ingredients (in Grams)

For the Beef Tips & Gravy

  • 900g beef stew meat or sirloin tips, cut into bite-sized pieces
  • 2 tablespoons olive oil (30ml)
  • 1 small onion, diced (~100g)
  • 3 cloves garlic, minced
  • 500ml beef broth
  • 1 tablespoon Worcestershire sauce (15ml)
  • 1 teaspoon soy sauce (optional, for extra depth)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 bay leaf

For Thickening the Gravy

  • 2 tablespoons cornstarch (16g)
  • 3 tablespoons cold water (45ml)

For Serving (Optional)

  • Mashed potatoes, rice, or egg noodles
  • Chopped fresh parsley (for garnish)

Instructions

1. Sear the Beef (Optional, but Recommended)

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the beef tips and brown them on all sides for about 3-4 minutes per batch. (This step enhances flavor but can be skipped for convenience!)
  3. Transfer the browned beef tips to the slow cooker.

2. Sauté the Aromatics

  1. In the same skillet, add the diced onion and cook for 2 minutes, until softened.
  2. Stir in the garlic and cook for 30 seconds.
  3. Transfer everything to the slow cooker.

3. Prepare the Gravy Base

  1. In a bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, salt, pepper, paprika, thyme, and rosemary.
  2. Pour this mixture over the beef tips in the slow cooker.
  3. Add the bay leaf for extra depth of flavor.

4. Slow Cook to Perfection

  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender.

5. Thicken the Gravy

  1. In a small bowl, mix cornstarch and cold water to create a slurry.
  2. Pour it into the slow cooker and stir well.
  3. Cover and cook on HIGH for an additional 15-20 minutes, until the sauce thickens.
