Slow Cooker Honey Garlic Chicken

Slow Cooker Honey Garlic Chicken is the perfect easy, healthy meal with tender, juicy chicken in a sticky, savory-sweet honey garlic sauce. Just 8 simple ingredients and minimal effort for a delicious dish everyone will love!

Total Time: 4 hours 30 minutes
Servings: 4

Ingredients:

For the Chicken:

  • 1 ½ pounds boneless, skinless chicken thighs or breasts
  • ⅓ cup low-sodium soy sauce
  • ⅓ cup honey
  • 2 tablespoons tomato paste
  • 2 teaspoons chili paste (sambal oelek, sriracha, or hot sauce of choice)
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch

For Serving:

  • Prepared brown rice, quinoa, or cauliflower rice
  • Toasted sesame seeds
  • Chopped green onions

Instructions:

  1. Prepare the Chicken: Place chicken in the bottom of a 6-quart or larger slow cooker.
  2. Make the Sauce: In a medium bowl, whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour the mixture over the chicken.
  3. Cook: Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours until the chicken reaches 165°F internal temperature.
  4. Thicken the Sauce: Once the chicken is done, remove it from the slow cooker and whisk cornstarch into the sauce. Cover and cook on HIGH for 15 minutes, or until thickened. For a thicker sauce, cook for 30 minutes or reduce it on the stovetop for 5-10 minutes.
  5. Shred the Chicken: Shred the chicken with two forks and return it to the slow cooker. Stir to coat with the sauce.
  6. Serve: Serve over rice, and top with toasted sesame seeds and chopped green onions.
