Slow Cooker Meatloaf

This tender and juicy slow cooker meatloaf is packed with flavor, perfectly seasoned, and topped with a tangy glaze. It’s a comforting classic made easier with the help of your slow cooker!


Ingredients

For the Meatloaf:

  • 2 pounds ground beef (80/20 or 85/15 works best)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning (optional)

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard

Instructions

Step 1: Prepare the Meatloaf

  1. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, Parmesan cheese, onion, garlic, Worcestershire sauce, salt, pepper, and Italian seasoning.
  2. Mix gently with your hands until just combined—avoid overmixing to keep the meatloaf tender.
  3. Shape the mixture into a loaf and place it on a piece of parchment paper or aluminum foil.

Step 2: Set Up the Slow Cooker

  1. Place the loaf into the slow cooker, keeping it on the parchment paper or foil for easy removal.
  2. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the internal temperature reaches 160°F (71°C).

Step 3: Make the Glaze

  1. In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard.
  2. During the last 30 minutes of cooking, spread the glaze over the meatloaf. Cover and continue cooking.

Step 4: Serve and Enjoy

  1. Carefully lift the meatloaf out of the slow cooker using the parchment paper or foil. Let it rest for 5–10 minutes before slicing.
  2. Serve with mashed potatoes, roasted vegetables, or a crisp salad.

Notes

  • Make Ahead: You can prepare the meatloaf mixture the night before and store it in the refrigerator until ready to cook.
  • Customizations: Add shredded carrots or zucchini for extra moisture and nutrients. Swap ground beef for ground turkey for a leaner option.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
