  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ teaspoon thyme (or Italian seasoning)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Rice:

  • 1 ½ cups white rice, cooked
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Chicken

  1. Season the Chicken: Sprinkle chicken breasts with salt, pepper, paprika, and garlic powder.
  2. Sear to Perfection: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-6 minutes per side until golden brown. Remove and set aside.

Step 2: Make the Creamy Gravy

  1. Sauté the Aromatics: In the same skillet, melt butter and add onions. Cook until soft, about 3 minutes. Stir in garlic and cook for 30 seconds until fragrant.
  2. Thicken the Sauce: Sprinkle flour over the onions and stir for 1 minute to cook out the raw taste.
  3. Add the Liquids: Slowly whisk in chicken broth and heavy cream, stirring constantly until smooth.
  4. Season & Simmer: Add thyme, salt, and pepper. Let simmer for 3-4 minutes, stirring occasionally.

Step 3: Smother the Chicken & Serve

  1. Return the seared chicken to the skillet, spooning the sauce over the top. Cover and let it simmer for 10 minutes, until the chicken is cooked through (165°F/75°C internally).
  2. Serve the chicken over cooked rice, smothered in the creamy gravy.
  3. Garnish with fresh parsley and enjoy!
