Ingredients

(Serves 4-6)

For the Chicken:

  • 700g boneless, skinless chicken thighs (or chicken breasts)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil or butter

For the Smothered Gravy:

  • 1 medium onion, diced (about 150g)
  • 2 cloves garlic, minced
  • 500ml chicken broth
  • 240ml heavy cream
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons cornstarch (mixed with 2 tablespoons water)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon ground black pepper

For the Rice:

  • 2 cups (370g) uncooked long-grain rice (jasmine or basmati)
  • 500ml water or chicken broth
  • 1/2 teaspoon salt
  • 1 tablespoon butter

For Garnish (Optional):

  • Fresh parsley, chopped
  • Extra black pepper

Instructions

Step 1: Season and Sear the Chicken

  1. Pat the chicken dry with paper towels and season both sides with salt, black pepper, garlic powder, onion powder, and paprika.
  2. Heat olive oil or butter in a large skillet over medium-high heat.
  3. Add the chicken and sear for 3-4 minutes per side, until golden brown. (It doesn’t need to be fully cooked at this stage.)
  4. Remove the chicken and set aside.

Step 2: Make the Smothered Gravy

  1. In the same skillet, add diced onions and cook until soft and translucent (about 3 minutes).
  2. Add garlic and sauté for another 30 seconds until fragrant.
  3. Pour in the chicken broth, Worcestershire sauce, thyme, smoked paprika, salt, and black pepper, stirring to combine.
  4. In a small bowl, mix cornstarch with water and add it to the skillet to help thicken the gravy.
  5. Stir in heavy cream and bring the mixture to a simmer for 2-3 minutes, allowing it to thicken slightly.

Step 3: Simmer the Chicken in the Gravy

  1. Return the seared chicken to the skillet, spooning the gravy over the top.
  2. Cover and let it simmer on low heat for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 75°C or 165°F).

Step 4: Cook the Rice

  1. While the chicken is simmering, rinse the rice under cold water to remove excess starch.
  2. In a separate pot, combine rice, water (or chicken broth), salt, and butter.
  3. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes, or until the rice is fluffy and tender.
  4. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

Step 5: Assemble and Serve

  1. Spoon a generous portion of rice onto each plate.
  2. Top with the smothered chicken and pour the rich gravy over everything.
  3. Garnish with fresh parsley and extra black pepper if desired.
