Smothered Green Chili Burritos

Ingredients (in Grams)

For the Burritos:

  • 500g shredded beef (or chicken)
  • 240g refried beans
  • 120g shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas (about 30cm each)
  • 1 small onion, diced (80g)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (15ml)

For the Green Chili Sauce:

  • 500g canned or fresh roasted green chilies, chopped
  • 480ml chicken broth
  • 2 tablespoons cornstarch + 2 tablespoons water (slurry for thickening)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon oregano
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 120ml heavy cream (optional, for creamier sauce)

For Garnish & Serving:

  • 60g sour cream
  • 2 tablespoons chopped cilantro
  • Sliced jalapeños (optional, for extra spice)

Instructions

Step 1: Prepare the Filling

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and garlic, sautéing for 2-3 minutes until soft.
  3. Stir in the shredded beef (or chicken), cumin, salt, and black pepper.
  4. Mix in the refried beans and shredded cheese, stirring until well combined.
  5. Remove from heat and set aside.

Step 2: Make the Green Chili Sauce

  1. In a saucepan over medium heat, add the green chilies and chicken broth.
  2. Stir in garlic powder, onion powder, oregano, salt, and pepper.
  3. Simmer for 5 minutes, then add the cornstarch slurry. Stir until thickened.
  4. (Optional) Add heavy cream for a richer, creamier sauce.
  5. Remove from heat and set aside.

Step 3: Assemble the Burritos

  1. Lay a tortilla flat and spoon a generous amount of filling in the center.
  2. Fold in the sides, then roll up tightly like a burrito.
  3. Repeat for all tortillas.

Step 4: Smother & Bake

  1. Preheat the oven to 190°C (375°F).
  2. Place the burritos seam-side down in a baking dish.
  3. Pour the green chili sauce evenly over the burritos.
  4. Sprinkle with extra cheese for a melty topping.
  5. Bake for 15-20 minutes, until cheese is bubbly and golden.

Step 5: Serve & Enjoy!

  1. Remove from the oven and let cool for a couple of minutes.
  2. Garnish with sour cream, chopped cilantro, and sliced jalapeños.
  3. Serve with Mexican rice, guacamole, or a fresh salad.
