Ingredients (in Grams)

For the Snickerdoodle Crust & Topping:

  • 250g all-purpose flour
  • 150g unsalted butter, softened
  • 150g granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

For the Cream Cheese Filling:

  • 200g cream cheese, softened
  • 50g granulated sugar
  • 1 egg yolk
  • ½ teaspoon vanilla extract

For the Apple Filling:

  • 3 large apples (about 400g), peeled and thinly sliced
  • 50g brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 10g cornstarch

For the Cinnamon Sugar Topping:

  • 30g granulated sugar
  • 1 teaspoon cinnamon

Instructions

Step 1: Prepare the Snickerdoodle Dough

  1. In a large bowl, cream together butter and sugar until light and fluffy.
  2. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

Step 2: Prepare the Cream Cheese Filling

  1. In a bowl, beat together cream cheese, sugar, egg yolk, and vanilla extract until smooth and creamy.

Step 3: Prepare the Apple Filling

  1. In a mixing bowl, toss apple slices with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
