This Southern Peach Cobbler is a classic dessert with a rich, sweet filling made from juicy peaches and a warm, spiced cinnamon biscuit topping. Perfectly golden on top, with a velvety peach filling beneath, it’s a comforting treat that’s easy to make and always a crowd-pleaser!
Ingredients
Peaches
- 2 bags Frozen peaches (20 ounces each)
- 1 cup Granulated sugar
- 1 cup Brown sugar
- 1 teaspoon Vanilla extract
- ½ teaspoon Almond extract (optional)
- ½ tablespoon Cinnamon
- ½ teaspoon Nutmeg
- 2 teaspoons Cornstarch
- 1 teaspoon Cream of tartar
- ½ stick Unsalted butter, room temperature
- 2 tablespoons Water
- 1 teaspoon Fresh lemon juice
Cobbler Topping
- 2 cups Flour
- ½ cup Granulated sugar
- ½ cup Brown sugar
- 2 teaspoons Baking powder
- 1 tablespoon Cinnamon (reserve ½ teaspoon for garnish)
- 1 stick Unsalted butter, cold
- ¼ cup Boiling hot water (see notes)
- ½ teaspoon Salt
- 3 tablespoons Granulated sugar (for dusting)

Instructions
- Preheat oven to 375°F. Spray a 9×13 baking dish with non-stick spray.
- In the prepared dish, add frozen peaches, granulated sugar, brown sugar, vanilla, almond extract, cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice. Stir to combine.
- Cover with foil and bake for 20 minutes.
- While the peaches are baking, prepare the topping. Combine flour, granulated sugar, brown sugar, baking powder, salt, and ½ tablespoon cinnamon in a bowl.
- Work the cold butter into the dry ingredients using a pastry cutter or your hands until it resembles coarse crumbs. Add boiling hot water, 1 tablespoon at a time, until the dough reaches a drop-biscuit-like texture.
- Remove peaches from the oven and spoon the dough mixture over the peaches in golf-ball-sized portions, leaving a bit of space between each.
- Sprinkle the remaining cinnamon-sugar mixture over the dough.
- Return the dish to the oven, uncovered, and bake for an additional 30-45 minutes until the topping is golden brown.
Notes:
- You can substitute fresh peaches for frozen peaches (8 fresh peaches will work well). Fresh peaches may release more liquid, so you might need to adjust the cooking time.
- If the dough is too thick, add more hot water, one tablespoon at a time, until it reaches the desired consistency.
- If there is too much liquid in the dish after baking, carefully remove some using a turkey baster or gently pour it out. Cobbler thickens as it cools.
