???? Why You’ll Love This Recipe

Sweet, earthy roasted sweet potatoes meet spicy, tangy buffalo chicken in this flavor-packed dinner that feels indulgent but is actually balanced and nourishing. These Spicy Buffalo Chicken Stuffed Sweet Potatoes are an easy weeknight meal, game day favorite, or meal prep superstar.

Think of it as wings-meets-wellness. You get all the bold flavor of buffalo chicken, the comforting richness of baked sweet potato, and the creamy coolness of a drizzle of ranch or blue cheese.

???? Ingredients (Serves 4)

For the Sweet Potatoes:

  • 4 medium sweet potatoes (about 1.2 kg total)
  • 1 tbsp olive oil (15 ml)
  • Salt and pepper, to taste

For the Buffalo Chicken:

  • 400g cooked chicken breast, shredded
  • 60g buffalo sauce (store-bought or homemade)
  • 20g unsalted butter, melted (optional, for richness)
  • 1/2 tsp garlic powder (2g)

Toppings:

  • 80g shredded cheese (cheddar or mozzarella)
  • 60g Greek yogurt or sour cream
  • 20g green onions, sliced
  • Optional: blue cheese crumbles, chopped celery, or ranch dressing

???? Instructions

Step 1: Bake the Sweet Potatoes

  1. Preheat oven to 200°C (400°F).
  2. Scrub and dry sweet potatoes, then prick them a few times with a fork.
  3. Rub with olive oil and sprinkle with salt.
  4. Place on a baking sheet and roast for 40–50 minutes, or until fork-tender.

Step 2: Prepare the Buffalo Chicken

  1. In a bowl, mix the shredded chicken with buffalo sauce, melted butter, and garlic powder.
  2. Stir until fully coated. Taste and add more buffalo sauce if you like it hotter!

Step 3: Assemble

  1. Once the sweet potatoes are done, let them cool slightly. Slice them open lengthwise and gently fluff the inside with a fork.
  2. Fill each sweet potato with the buffalo chicken mixture.
  3. Top with shredded cheese and place under the broiler for 2–3 minutes to melt.

Step 4: Garnish and Serve

Drizzle with Greek yogurt or ranch, sprinkle with green onions, and add any extra toppings you love. Serve warm!

❤️ From My Kitchen to Yours

This recipe was born out of a love for buffalo chicken anything — wings, dip, wraps — but with a healthier, whole-food twist. The sweet potato acts like a soft, slightly caramelized base that balances the spice perfectly.

It’s hearty, hot, and ready to customize. Add cheese, skip the dairy, double the hot sauce — it’s yours to make your own. Whether you’re feeding a crowd or just yourself, this one hits every time.
