Spicy potato noodles are a flavorful and comforting dish featuring chewy potato-based noodles tossed in a bold, spicy sauce. This quick and easy recipe is perfect for those who love a bit of heat and crave a hearty, satisfying meal.


Ingredients

For the Noodles:

  • 1 lb potato starch noodles (or glass noodles)
  • 4 cups water (for boiling)

For the Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp chili oil (adjust to taste)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tsp red pepper flakes (optional, for extra heat)

For Toppings:

  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Cook the Noodles:
    • Bring 4 cups of water to a boil in a large pot. Add the potato starch noodles and cook according to the package instructions (usually 8-10 minutes) until soft but chewy. Drain and rinse under cold water to prevent sticking.
  2. Prepare the Sauce:
    • In a small bowl, whisk together soy sauce, chili oil, sesame oil, rice vinegar, sugar, minced garlic, grated ginger, and red pepper flakes until well combined.
  3. Combine Noodles and Sauce:
    • Place the cooked noodles in a large mixing bowl. Pour the spicy sauce over the noodles and toss until evenly coated.
  4. Serve and Garnish:
    • Divide the noodles into bowls. Top with sliced green onions, toasted sesame seeds, and chopped cilantro if desired.
