Spinach and Mushroom Crustless Quiche

Spinach and Mushroom Crustless Quiche is an easy, healthy alternative to traditional quiche. Without the crust, it’s lighter but still packed with creamy, cheesy, and flavorful goodness. This dish is great for those watching carbs or gluten intake but craving a rich, satisfying meal.

Loaded with sautéed mushrooms and fresh spinach, this quiche delivers a lovely blend of textures and nutrients. Eggs and cheese provide protein and creaminess, while fresh herbs add a bright finish. It’s ideal for meal prep, brunch gatherings, or a cozy homemade dinner.


???? Ingredients (U.S. Standard Measurements)

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced (button or cremini)
  • 1 cup shredded cheese (cheddar, Swiss, or your favorite)
  • ½ cup milk (whole or 2%)
  • 2 tablespoons olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: 1/4 teaspoon nutmeg
  • Optional: fresh herbs (parsley, thyme, or chives) for garnish

1. Preheat Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish or baking dish.

2. Sauté Vegetables

In a skillet, heat olive oil or butter over medium heat. Add chopped onion and garlic; sauté for 2-3 minutes until translucent.

Add sliced mushrooms and cook for 5-7 minutes until browned and soft. Stir in spinach and cook until wilted, about 1-2 minutes. Remove from heat and let cool slightly.

3. Prepare Egg Mixture

In a large bowl, whisk eggs with milk, salt, pepper, and nutmeg (if using).

4. Combine and Pour

Add the sautéed veggies and shredded cheese to the egg mixture. Stir gently to combine.

Pour the mixture into the prepared baking dish.

5. Bake

Bake for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.

6. Cool & Serve

Allow to cool for 5-10 minutes before slicing. Garnish with fresh herbs if desired.

???? Bacon & Herb Crustless Quiche

Add 4 slices cooked and crumbled bacon and fresh rosemary or thyme to the egg mixture for a smoky, savory twist.

  • Don’t overbake — the quiche should be just set and slightly jiggly in the center. It will firm up as it cools.
