Ingredients (Serves 4-5)

For the Pasta:

  • 250g (9 oz) penne or rigatoni pasta
  • 1 tbsp salt (for boiling water)

For the Spinach Dip Chicken Sauce:

  • 2 tbsp olive oil or butter
  • 450g (1 lb) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional, for added depth of flavor)
  • 3 cloves garlic, minced
  • 200g (7 oz) cream cheese, softened
  • 120ml (½ cup) chicken broth
  • 240ml (1 cup) heavy cream
  • 60g (½ cup) parmesan cheese, grated
  • 100g (1 cup) shredded mozzarella cheese
  • 150g (5 oz) fresh spinach, chopped
  • ½ tsp red pepper flakes (optional, for a little spice)

For Garnish:

  • Extra parmesan cheese
  • Fresh basil or parsley, chopped

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Step 2: Cook the Chicken

  1. Heat olive oil or butter in a large skillet over medium-high heat.
  2. Add the chicken pieces, season with salt, pepper, and paprika, and cook until golden brown and fully cooked (about 6-7 minutes). Remove from the skillet and set aside.

Step 3: Make the Spinach Dip Sauce

  1. In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 30 seconds, until fragrant.
  2. Add the cream cheese and chicken broth, stirring continuously until smooth and combined.
  3. Pour in the heavy cream and stir well.
  4. Add the parmesan cheese and mozzarella cheese, stirring until melted and creamy.
  5. Toss in the fresh spinach and let it wilt in the sauce (about 1-2 minutes).

Step 4: Combine Everything

  1. Return the cooked chicken to the skillet and stir to coat in the creamy spinach sauce.
  2. Add the cooked pasta, tossing everything together until well combined.
  3. Taste and adjust seasoning if needed.

Step 5: Serve & Garnish

  1. Plate the pasta and top with extra parmesan cheese, fresh basil or parsley, and a sprinkle of red pepper flakes (if using).
  2. Serve immediately and enjoy this creamy, cheesy goodness!

Tips & Tricks for the Best Spinach Dip Chicken Pasta

✔️ Use Fresh or Frozen Spinach – Fresh spinach works best, but frozen spinach (thawed and drained) is a great alternative.
✔️ Want More Flavor? – Add a splash of white wine to the sauce for extra depth.
✔️ Make It Lighter – Swap heavy cream for half-and-half or Greek yogurt for a lighter sauce.
✔️ Add a Crunchy Topping – Sprinkle some buttered breadcrumbs or crushed crackers on top for a crunchy twist.
✔️ Use Rotisserie Chicken – Save time by using shredded rotisserie chicken instead of cooking fresh chicken.
✔️ Spice It Up – A little cayenne pepper or extra red pepper flakes can add some heat if you love spice!

Why This Recipe Works

This recipe is a fusion of two beloved comfort foods—spinach dip and creamy chicken pasta. The result is a rich, cheesy, garlicky sauce that clings perfectly to the pasta, with tender chicken and a touch of fresh spinach for balance. It’s the kind of meal that feels decadent but easy enough for a weeknight dinner.

Whether you’re cooking for your family, a romantic date night, or even just meal prepping for the week, this dish is guaranteed to be a crowd-pleaser!
