Sticky Beef Noodles

August 8, 2025 by [email protected] Leave a Comment

These Sticky Beef Noodles are the perfect fusion of sweet, savory, and spicy flavors, all tossed with tender beef strips and chewy noodles in a glossy, sticky sauce. This 30-minute meal is a total crowd-pleaser and better than takeout!

Ingredients

For the Beef:

  • 1 lb (450g) flank steak or sirloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil (or vegetable oil)

For the Sauce:

  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon sriracha (optional, for heat)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

For the Noodles:

  • 8 oz (225g) rice noodles, udon, or lo mein noodles
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • 1 carrot, julienned
  • ½ bell pepper, thinly sliced
  • Sesame seeds and chopped cilantro (optional for garnish)

Instructions

  1. Marinate the Beef: Toss beef slices with soy sauce, cornstarch, and sesame oil. Let it marinate while you prepare other ingredients (10–15 minutes).
  2. Cook the Noodles: Prepare noodles according to package instructions. Drain and set aside.
  3. Make the Sauce: In a bowl, whisk together soy sauce, hoisin, brown sugar, oyster sauce, rice vinegar, sriracha, garlic, and ginger. Set aside.
  4. Sear the Beef: Heat 1 tablespoon of oil in a large skillet or wok over high heat. Sear beef in a single layer for 1–2 minutes per side until browned. Remove and set aside.
  5. Sauté Veggies: In the same pan, add remaining oil. Sauté carrots and bell peppers for 2–3 minutes until slightly tender.
  6. Combine Everything: Return beef to the pan. Pour in the sauce and bring to a simmer until it thickens and coats the meat (2–3 minutes).
  7. Add Noodles: Toss in the cooked noodles and green onions. Stir well to coat everything in the sticky sauce.
  8. Garnish & Serve: Sprinkle with sesame seeds and cilantro if desired. Serve hot.

Tips

  • Slice beef thinly against the grain for the most tender texture.
  • For extra stickiness, let the sauce simmer a little longer to reduce and caramelize.
  • Use a nonstick skillet or wok for best results when stir-frying.
  • Prep all your ingredients ahead of time—this dish cooks fast!

Variations and Substitutions

  • Protein Swap: Try it with chicken, tofu, shrimp, or pork.
  • Noodle Options: Use soba, ramen, spaghetti, or even zucchini noodles for a low-carb twist.
  • Add Veggies: Broccoli, snow peas, bean sprouts, or mushrooms work great.
  • Gluten-Free: Use tamari or coconut aminos and gluten-free noodles.

FAQs

Can I make this ahead of time?
Yes! You can prep the beef and sauce in advance. Stir-fry everything fresh for best results.

Can I use pre-cooked noodles?
Absolutely—just make sure they’re rinsed and loosened before adding to the pan.

How spicy is this dish?
It’s mildly spicy with the sriracha. Leave it out or reduce it for a milder flavor.

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet with a splash of water or soy sauce.

Serving Suggestions

  • Serve with a side of steamed edamame, Asian cucumber salad, or crispy spring rolls.
