Sticky Beef Noodles Recipe

???? Ingredients (Serves 4)

  • 300g beef sirloin or flank steak, thinly sliced against the grain
  • 250g egg noodles (or your preferred noodles)
  • 2 tbsp vegetable oil (about 30ml)
  • 3 cloves garlic (about 9g), minced
  • 1 medium onion (about 120g), sliced
  • 1 tbsp ginger (about 10g), grated
  • 3 tbsp soy sauce (about 45ml)
  • 2 tbsp hoisin sauce (about 30ml)
  • 1 tbsp oyster sauce (about 15ml)
  • 1 tbsp brown sugar (about 12g)
  • 1 tbsp rice vinegar (about 15ml)
  • 1 tsp sesame oil (about 5ml)
  • 1 tsp chili paste (optional, for heat)
  • 2 green onions (about 20g), sliced, for garnish
  • Sesame seeds (optional, for garnish)

Step 1: Cook the Noodles

In a large pot, bring water to a boil and add a pinch of salt. Cook the noodles according to the package instructions, usually 5-7 minutes. Once cooked, drain the noodles, but reserve about 1/4 cup of the cooking water to help with the sauce later.

Step 2: Prepare the Beef

While the noodles are cooking, heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and swirl it to coat the bottom. Add the sliced beef and cook for about 3–4 minutes, or until browned and cooked through. Remove the beef from the skillet and set it aside.

Step 3: Sauté Aromatics

In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, garlic, and grated ginger. Sauté for about 2 minutes, until fragrant and the onion begins to soften.

Step 4: Make the Sauce

In a small bowl, mix together the soy sauce, hoisin sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and chili paste (if using). Stir until the sugar has dissolved and the sauce is well combined.

Step 5: Combine Noodles, Beef, and Sauce

Add the cooked noodles to the skillet with the aromatics, followed by the cooked beef. Pour the sauce mixture over the top and toss everything together to coat the noodles and beef in the sauce. Let it simmer for 2-3 minutes to allow the sauce to thicken and become sticky. If needed, add some of the reserved pasta water to loosen the sauce.

Step 6: Garnish and Serve

Once everything is well-coated and the sauce has thickened to a sticky consistency, remove the skillet from the heat. Garnish with sliced green onions and sesame seeds, if desired. Serve immediately and enjoy!
